I was to send you some pictures of our grandsons with their walleyes and our favorite recipe for walleye.The pictures I will send to you later but below is my walleye recipe.
This is the same recipe that I sent to Taste of Home. They used it in their Wild Game catagory. This recipe was taken from a Canadian recipe book that a friend of mine had received from her sister who lives in Canada. Sorry I don’t remember the name of the book. When we have guests for dinner and are serving walleye, this is the recipe that I use. It is always a huge hit; especially since most people don’t use honey drizzled on their fish. It is a different way of serving fish without always using the beer batter deep fried method. I have had this recipe for well over 10 years. I have used it so many times that this is one that I seem to never forget the ingredients. When we get fresh morels, we always have fresh walleye with them!! Hope you will enjoy walleye cooked this way as much as we do!
Honey-fried Walleye Fillets
1 egg, beaten
1 teaspoon honey
1 cup coarsely crushed soda crackers
1/3 cup all purpose flour
1/4 teaspon salt
1/4 teaspoon pepper
1 1/2 lbs walleye fillets – skin removed.
Vegetable oil
In a small mixing bowl (or in a ziploc type bag), combine egg and honey. In a shallow dish (or a ziploc type bag), combine crackers, flour, salt and pepper. Dip fillets first in egg mixture and then dredge in cracker mixture to coat.
In a 12 inch skillet, heat 1/8 inch oil over medium heat. Add fillets. Fry for 4 to 7 minutes, or until golden brown, turning over once. Drain on paper towel lined plate. Serve with lemon wedges and additonal honey for drizzling.
